Taco Soup


1 lb lean ground beef (97/3)
1 yellow onion, diced
2 cloves garlic, minced
1 can low sodium beef broth
1 can pinto beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can corn
1 can diced tomatoes
1 can Rotel tomatoes, partially drained
1 package taco seasoning
1/2 package Ranch Salad Dressing Mix
1 tsp cumin
black pepper to taste

In a large soup pot over medium high heat, brown ground beef until cooked through.  Add the onions and garlic and cook until tender, about 5 minutes.  Add remaining ingredients and stir well.  Bring to a boil, reduce heat to medium low, and simmer for 45 minutes, stirring occasionally.  Serve up in big soup bowls and top with what you like.  Enjoy!
