Mom's Cream of Mushroom Soup


16 oz. fresh mushrooms, sliced
1/2 yellow onion, diced
1 clove garlic, minced (optional)
4 T butter
1/4 C flour
1/2 tsp salt
1/4 tsp pepper
1 can (2 Cups) low sodium chicken broth
1 C half 'n half
garlic powder (optional)

In a large soup pan, melt the butter over medium heat.  Add the mushrooms and onions and cook until tender, about 10 minutes.  Add the flour, salt, and pepper.  Cook over low heat for 1 minute while stirring.  Add the chicken broth and bring to a boil.  Lower the heat and simmer for 3 minutes, stirring constantly.  Turn off the heat and stir in the half and half.  Taste and adjust the seasonings.  I added some garlic powder to mine!  Enjoy!
